Timian med spaghetti - bum!

Timian er en fantastisk krydderurt. Herlig efterårsskovbundsagtig aroma og et vildt udseende. Prøv lige at se her. Skydende arabesker. Smukt!

Her er en meget simpel pastaret til to personer, der lader timianen komme til sin ret.

Kog pasta - for eksempel spaghetti - i en stor gryde med masser af vand og masser af salt. Imens smider du en stor pande på blusset. Olivenolie på panden fulgt at cirka 100 gram pancetta eller god røget bacon i tern. Steg indtil gyldent. Mmm. Smid to fed hakket hvidløg, lidt hakket chili, en masse timian, lidt mere olivenolie, salt og masser af friskkværnet peber i panden. Lad lige det hele varme igennem.

Vend derefter den kogte pasta i olieblandingen sammen med lidt af kogevandet fra pastaen.

In English:

Boil pasta – for instance spaghetti – in a large pot with lots of water and lots of salt.

Throw a pan on the fire and fry off around 200 grams of cubed pancetta or nice smoky bacon in a bit of olive oil. Give it some colour and crunchiness. Mmm. Toss in two cloves of chopped garlic, a bit of ditto chilli, lots of fresh thyme, a bit more oil, salt and lots of freshly ground black pepper. Let it all warm through.

Toss the boiled pasta into the pan with a bit of the cooking water. Keep tossing it until you’re happy with the consistency. You’re looking for the meat, garlic, chilli, thyme and oil to cling to the pasta.

Serve with some more fresh thyme and freshly ground black pepper.
